Steamed fish

Per kilogram of fish:
- Add 2.5 grams of Buisman caramelised sugar emulsion (0.25% of the weight of fish) and rub this mixture carefully into the fish.
- Place the fish on a grill in a combi-steamer and cook for 10 minutes at 75º C and 100% steam.
